Farmer's Casserole...and other breakfast casseroles
We are trying out breakfast casseroles, stratas, baked oatmeal, and whatever else we can come across that will allow us to prep on Sunday, bake Monday morning, and have breakfast for the weekend.

This is one I have not tried yet - but plan to soon. The original link is at the bottom - and they have pictures, because they have actually made it before. A few tweaks...I think I will go with sausage instead of ham, and regular onions instead of green onions - mostly because I have them and they are less expensive :) I will also use sharp cheddar because 1) I have some and 2) I don't have to worry about the combination of spices in the sausage and the pepper cheese). If we like it, I may try substituting cooked chorizo for the sausage next time :)
Farmer's Casserole
3 cups frozen hash browns
3⁄4 cup shredded Sharp cheddar cheese (or monterey jack pepper cheese)
1 lb cooked and drained breakfast sausage ( or 1 cup cubed cooked ham)
1⁄4 cup finely chopped onion (or green onion, well chopped)
4 well beaten eggs
1 (12 ounce) can evaporated milk
1⁄4 teaspoon black pepper
1⁄2 teaspoon salt
Directions
Grease 2 quart rectangular baking dish.
Arrange potatoes evenly on bottom of baking dish.
Sprinkle with cheese, ham, onions.
Combine milk and eggs and seasonings.
Pour over potatoes and cheese. Cover with foil (or other cover of choice - it will be removed for baking).
Refrigerate over night.
Remove cover, place in cold oven.
Bake at 350 for 45-55 minutes until set.
Let rest 5 minute.

We went with 4 cups of potatoes and 6 eggs. Plus we added in about a cup of chopped green chiles.
