Fruit and Nut Stuffed Acorn Squash (Slow Cooker)

I have been wanting to make acorn squash stuffed with apples and Craisins, but I kept getting held up because I couldn't find a recipe I wanted. I will also admit that on these occasions I had not planned far enough ahead to allow myself some time to do research. I just wanted to magically land on the perfect recipe.

Never happened.

But what did magically happen is I finally started the process early enough to do some research and create my own recipe! And to keep life sane, I cooked it up in a slow cooker.



 I think it turned out pretty good, if I do say so myself ;)



Wash you squash (hey, it's fun to say!) and cut in half from stem to bottom - you'll want to use a heavy, sharp knife for that. Clean out the seeds and squash strings - you have to scrape pretty good to get them out. Lay a strip of foil in your slow cooker and set the acorn squash halves in. Isn't it cool how you can crumple up the foil to help the squash sit level.


Peel, core, and chop an apple or two (depends on size of apples and size of squash you are stuffing). Add in about a half cup each of Craisins and nuts (I used pecans broken in half). Sprinkle with a couple of tablespoons of brown sugar and some cinnamon. Mix well.


 Fill those acorn squash halves up with the filling you just made.


Since it will cook down, it's OK if you mound it up a bit. You can also press it down to convince it to stay put.


There they are - ready to go! Put the lid on a cook on low for about 8 hours.


OK, the steam makes it a bit tough to see, but trust me...it looks great!


Still a bit steamy - and it smelled fabulous!

This dish is so easy and delicious that I will definitely be buying more acorn squash in the future.

Fruit and Nut Stuffed Acorn Squash (Slow Cooker)

1 large acorn squash, cut in half and scraped clean of seeds and strings
1-2 medium apples, peeled, cored, and chopped
1/2 c pecans, broken in half
1/2 c Craisins
2 tablespoons brown sugar
1/2 - 1 teaspoon cinnamon

Cut and clean seeds and string out of acorn squash. Lay long sheet of foil in bottom of large slow cooker, and lay squash on top, face up.

Mix chopped apples, broken pecans, Craisins, brown sugar and cinnamon in medium bowl. Spoon into squash halves.

Set crock pot on low, cover and cook about 8 hours.
